JUDGING WINES IN CONJUCTION WITH APPROPRIATE FOOD

The Sparkling Wines
were judged with Crab with Avocado and Lime Mayonnaise (tartlet or timbale)

As presented by Celebrity Chef MICHAEL MANNERS

INGREDIENTS:

300g Picked crab meat
50g Mayonnaise
1 finely chopped spring onion
diced avocado
2T of parsley, chopped
2T of chives, chopped
Salt
Pepper
Cayenne
Paprika
Lemon - the juice and grated rind

Avocado puree

3 Avocados
50ml Buttermilk
1 Lemon juiced
Paprika
Cayenne
Salt

Shaved radish to serve

METHOD:

Combine crab, mayonnaise, onion, avocado, herbs and spices, season with salt.

Avocado puree   -   blend all the ingredients and season to taste.

Serve on toasts topped with the puree and shaved radish.
